- egg, for brushing (a little)
Instructions
- A juicy piece of lean beef is thoroughly pounded, skinned, generously larded with bacon, and placed on the heat with half water, half vinegar, plenty of seasoning, especially onions, and some garlic and butter; let it cook, half boiling, half frying, without piercing it.
- Let the meat sit overnight, then finely chop many shallots, mix them with pepper, salt, and grated white bread, slice the meat, brush with egg, press into the shallot mixture, and fry in a pan like cutlets.
