Pork Brisoletts

Ingredients
- 500 g coarse lean pork
- 125 g fresh back or belly fat
- 3 pcs eggs
- salt (a little)
- ground pepper (a little)
- chopped herbs (a little)
- lemon zest (a little)
- 1 upper cup grated breadcrumbs

- grated breadcrumbs for breading (a little)
- butter (a little)
Instructions
- Finely chop 500 g coarse, lean pork with 125 g fresh back or belly fat.
- Mix with 3 eggs, salt, ground pepper, finely chopped herbs, lemon zest, and 1 upper cup of grated breadcrumbs.
- Form the mixture into round, potato-sized balls, flatten them slightly, dip in beaten egg, then in grated breadcrumbs, and fry in butter for about 5 minutes until cooked through.
