Beefsteaks from Ham Scraps

  1. Place all raw ham meat that can no longer be served well, after removing the rind and tendons, in water for one day and then in milk overnight.
  2. Chop it as finely as possible, form into finger-thick beefsteaks, dip in egg with a little pepper, then coat in rusk and fry as described previously.
