Beefsteaks from Ham Scraps

Ingredients
- Ham scraps, raw (a little)
- Water (a little)
- Milk (a little)
- Egg (a little)
- Pepper (a little)
- Rusk (a little)
Instructions
- Place all raw ham meat that can no longer be served well, after removing the rind and tendons, in water for one day and then in milk overnight.
- Chop it as finely as possible, form into finger-thick beefsteaks, dip in egg with a little pepper, then coat in rusk and fry as described previously.
