Beefsteaks from Raw Ham

- Raw ham (a little)
- Milk (a little)
- Egg (a little)
- Pepper (a little)
- Crushed rusk or grated white bread (a little)
- Butter (a little)
Instructions
- Cut finger-thick slices of raw ham, soak them in milk overnight (especially necessary for salted or dry ham), vigorously pound both sides of the slices with the back of a knife, dip them in beaten egg with a little pepper, then coat them in crushed rusk or grated white bread, and fry them in an open pan in hot butter over very low heat, turning them several times, until they are dark yellow.
