Tench with Dill

Ingredients
- 1.25 kg tench
- cold water (as needed)
- 2 pcs onions
- 1 pcs bay leaf
- 3 pcs allspice berries
- salt (a little)
- 2 tbsp butter
- 1 tbsp wheat flour, smoothly mixed
- 1 tbsp dill, finely chopped
- 2 pcs egg yolks (optional)
Instructions
- Place 1-1½ kg of prepared, cut tench into cold water that has been seasoned with 2 sliced onions, 1 bay leaf, 3 allspice berries, and salt.
- As soon as the fish begins to boil, pour off enough water so that only the amount needed for the sauce remains.
- Add 2 tablespoons of butter and thicken the sauce with 1 tablespoon of smoothly mixed wheat flour.
- Finally, stir in 1 tablespoon of finely chopped dill.
- If desired, the sauce can also be enriched with 2 egg yolks.
