Anchovy Canapés

Ingredients
- milk rolls or long white bread (as needed)
- butter (a little)
- milk (for soaking, optional) (a little)
- egg (for coating, optional) (a little)
- anchovies (as needed)
- 4 pcs hard-boiled egg yolks
- chopped herbs (tarragon, parsley) (a little)
- 0.12 L bouillon
- 2 tbsp fine oil
- 1.5 tbsp sharp wine vinegar
- capers (a little)
- mustard (a little)
- pepper (a little)
Instructions
- Slice milk rolls or a long white bread.
- Either toast them dry, fry them golden in butter, or dip them in milk and egg and then quickly fry them golden in butter.
- Spread the canapés with the sauce and top with prepared anchovies.
- For the sauce, finely mash the yolks of 4 hard-boiled eggs, mix in chopped herbs like tarragon and parsley, and gradually stir in 1/8 liter of bouillon, 2 tablespoons of fine oil, 1-2 tablespoons of sharp wine vinegar, capers, mustard, and a little pepper.
