Marinated Salt Herring, Sour Herring

Ingredients
- salt herrings (as needed)
- bay leaves (a little)
- whole peppercorns (a little)
- allspice (a little)
- sliced lemon peel (a little)
- capers (a little)
- good wine vinegar (as needed)
- boiled water (as needed)
Instructions
- Prepare the salt herrings as usual, and without cutting them into pieces, marinate them like the fried herrings: layer them alternately in a container with bay leaves, whole peppercorns, allspice, sliced lemon peel, and capers, then pour a mixture of good wine vinegar and boiled water over them.
- When preparing, the herrings can also be split lengthwise and the backbone removed.
