Fried Salt Herring

Ingredients
- salt herrings (as needed)
- milk (for soaking) (as needed)
- butter (for greasing paper) (a little)
- butter (for frying) (a little)
Instructions
- Cut off the fins, remove the backbone, roe, or milt, and place the herrings in milk to draw out the salt.
- Afterward, dry them, roll each herring individually in buttered paper, and pinch the ends closed to keep the fat and steam inside.
- Prepared this way, place them in hot butter and roast in the oven for a quarter of an hour.
- Arrange without the paper and pour the hot butter over them.
