Crucian Carp with Bacon

Instructions
- Score the prepared crucian carp twice along the back and salt them.
- Roast flour in butter and rendered bacon until golden, add meat broth and a little vinegar, let it boil well, and season with pepper, a bay leaf, and ginger.
- Cook the crucian carp in this broth, arrange them on a warmed dish, sprinkle with bacon cubes, and serve the sauce alongside.
