Fried Cod

Ingredients
- cod (tail piece) (as needed)
- salt (a little)
- flour (a little)
- breadcrumbs (a little)
- butter (generous amount)
- egg, beaten (for the baked variation) (a little)
- grated white bread (a little)
- mustard (as needed)
- boiled potatoes or potato salad (as needed)
- anchovy, caper, or remoulade sauce (as needed)
Instructions
- It's best to use the tail piece, which is scaled, cleaned, and cut into two-finger-wide slices.
- Sprinkle these with salt, dredge them in flour and breadcrumbs, and fry them in butter until brown.
- Serve with mustard and boiled potatoes or potato salad.
- You can also bake the cod tail: score it, sprinkle with salt, and let it sit for 2 hours.
- Afterward, pat it dry, coat it in melted butter or whisked egg, sprinkle with grated white bread, and bake it in an open pan for ½-¾ hour in plenty of browned butter until cooked and crispy.
- Serve hot with anchovy, caper, or remoulade sauce.
