Boiled Lobster or Lobster Naturel

Ingredients
- 1 pcs lobster
- boiling water (as needed)
- bacon rind (a little)
- butter (a little)
- chopped parsley (a little)
- 1 pcs quartered lemon
- cooking oil (served cold) (a little)
- wine vinegar (served cold) (a little)
Instructions
- Wash and brush the lobster clean, then place it headfirst into boiling water, which will kill it instantly.
- The water must be boiling vigorously and remain so during cooking.
- Cook for 20-30 minutes depending on size, and after removing, brush with bacon rind to make it shine.
- Before serving, halve the lobster lengthwise with a knife and hammer, cut the halves crosswise into smaller pieces, crack the claws so the meat can be easily removed at the table, and reassemble the pieces to restore the lobster's original shape.
- Garnish the dish with parsley leaves.
- Serve warm with butter, finely chopped parsley, and quartered lemons; serve cold with cooking oil, wine vinegar, and parsley.
