Green Pike

Ingredients
- Pike (as needed)
- Water (as needed)
- Salt (a little)
- Onion, sliced (a little)
- Parsley roots, cleaned (a little)
- 1 pieces Bay leaf
- Allspice berries (a little)
- Parsley (1 sprig)
- Butter (a small piece)
- Roux, light (a little)
- Parsley, finely chopped (a little)
Instructions
- Smaller as well as larger pike are suitable for this; prepare them and cut into serving pieces.
- Bring water to a boil with salt, the sliced onion, cleaned parsley roots, bay leaf, allspice berries, and a sprig of parsley.
- As soon as the roots are soft, add the fish, pour off enough water so that it is just covered, add a piece of butter, and cook very gently until done.
- For the sauce, strain the necessary amount of fish water, thicken with light roux, and add finely chopped parsley.
- To serve, pour the sauce over the fish.
