Steamed Pike

Ingredients
- Pike (as needed)
- Salt water (as needed)
- Capers (a little)
- White wine (a little)
- Fish water (a little)
- Lemon juice and zest (a little)
- Butter, fresh (generous piece)
- White bread, grated (a little)
- Anchovies, finely chopped (a little)
- 1 pieces Egg yolks
Instructions
- Using a sharp knife, cut the scales close to the skin so it appears completely white.
- Split the pike, cut into pieces, rinse well, boil in salt water for 5 minutes, and transfer to another dish.
- Bring capers with white wine, a little fish water, lemon juice and zest, a generous piece of fresh butter, and some grated white bread to a boil, pour over the pike, and let it simmer slowly for half an hour.
- When serving, season the sauce with finely chopped anchovies, thicken with egg yolk, and serve the pike very hot.
