  1. Using a sharp knife, cut the scales close to the skin so it appears completely white.
  2. Split the pike, cut into pieces, rinse well, boil in salt water for 5 minutes, and transfer to another dish.
  3. Bring capers with white wine, a little fish water, lemon juice and zest, a generous piece of fresh butter, and some grated white bread to a boil, pour over the pike, and let it simmer slowly for half an hour.
  4. When serving, season the sauce with finely chopped anchovies, thicken with egg yolk, and serve the pike very hot.
