  1. Scale, gut, wash, split, and cut the pikeperch into pieces.
  2. Lightly score the top skin, salt the fish, and let it stand for half an hour.
  3. Afterward, pat the pieces dry, dredge them in egg and grated breadcrumbs or just in flour, and fry them brown and crispy in plenty of hot butter in an open pan.
  4. To prevent the fish from becoming soft again, bake it just before serving and do not cover it.
  5. Green salad, celery or cucumber salad, or sauerkraut pair well with this dish.
