Baked Pikeperch

Ingredients
- 1 pcs pikeperch
- salt (a little)
- egg (a little)
- grated breadcrumbs or flour (a little)
- butter (plenty)
- green salad, celery or cucumber salad, or sauerkraut (as needed)
Instructions
- Scale, gut, wash, split, and cut the pikeperch into pieces.
- Lightly score the top skin, salt the fish, and let it stand for half an hour.
- Afterward, pat the pieces dry, dredge them in egg and grated breadcrumbs or just in flour, and fry them brown and crispy in plenty of hot butter in an open pan.
- To prevent the fish from becoming soft again, bake it just before serving and do not cover it.
- Green salad, celery or cucumber salad, or sauerkraut pair well with this dish.
