Frog Leg Ragout

Ingredients
- frog legs (as needed)
- vinegar (a little)
- water (as needed)
- salt (a little)
- butter (a little)
- shallots (a little)
- flour (a little)
- good broth (as needed)
- mace (a little)
- lemon slices (a little)
- egg yolks (a little)
- bread dumplings (optional) (as needed)
Instructions
- Place the frog legs in a dish with vinegar, water, and salt, beat them with a whisk, then remove and drain well.
- Melt butter, add the frog legs with shallots and salt, and simmer covered until almost done.
- Dust with a little flour, add good broth, mace, and a few lemon slices, and serve enriched with egg yolk.
- Optionally, bread dumplings cooked in broth or salted water can also be placed among the meat.
