Boiled Fresh Salmon

  1. Scale and thoroughly wash 1 kilogram of fresh salmon, preferably Rhine salmon or Atlantic salmon.
  2. Prepare a broth from 2 parts water and 1 part vinegar, sliced onion, some carrot slices, a little lemon zest, a bay leaf, peppercorns and spices, cloves, and plenty of salt.
  3. Let it boil for fifteen minutes.
  4. Place the fish in the broth, bring to a brief boil only, then remove the pot from the heat and let it steep in a warm place, well covered.
  5. To serve, lift the fish from the broth, drain, and sprinkle with chopped parsley or grated hard-boiled egg yolk.
