Fresh or Green Herring Marinated Stralsund Style

Ingredients
- herrings (as needed)
- 1 L good kitchen vinegar
- 1 tbsp salt
- sliced onions (a little)
- bay leaves (a little)
- allspice berries (a little)
- peppercorns (a little)
- mustard seeds (optional) (a little)
- chili pepper (optional) (a little)
Instructions
- Gut the herrings, wash them thoroughly, drain well, and layer them in a deep container.
- Pour good kitchen vinegar, to which about 1 tablespoon of salt has been added per liter, over them so that the herrings are completely covered, and let them stand for 24 hours.
- Afterward, remove them, drain well, and layer with sliced onions, bay leaves, allspice berries, and peppercorns.
- For a spicier taste, you can also add mustard seeds or a little chili pepper.
- The herrings are ready after 3 days but will keep for some time; packed in soldered tin cans, they will keep for months.
