Fresh or Green Herring Marinated Stralsund Style

  1. Gut the herrings, wash them thoroughly, drain well, and layer them in a deep container.
  2. Pour good kitchen vinegar, to which about 1 tablespoon of salt has been added per liter, over them so that the herrings are completely covered, and let them stand for 24 hours.
  3. Afterward, remove them, drain well, and layer with sliced onions, bay leaves, allspice berries, and peppercorns.
  4. For a spicier taste, you can also add mustard seeds or a little chili pepper.
  5. The herrings are ready after 3 days but will keep for some time; packed in soldered tin cans, they will keep for months.
