Fresh or Green Herring in Jelly

Ingredients
- 15 pcs cooked herrings
- vinegar (a little)
- vinegar or lemon juice (for seasoning) (a little)
- 5 sheets white gelatin sheets
Instructions
- Cook the herrings as described for boiling, but add a dash of vinegar.
- Remove the fish, reduce the fish stock by about half, season with vinegar or lemon juice, and strain through a sieve.
- For about 15 herrings, add 5 sheets of dissolved white gelatin, bring to a boil once, and pour over the herrings arranged in a bowl.
- Serve the chilled herrings with buttered bread or potato salad.
