  1. Cod, one of the most delicate sea fish and very similar to haddock, is cut into portion-sized pieces after cleaning and cooked for only a few minutes in vigorously salted water, as it easily falls apart otherwise.
  2. If you wish to serve it whole, cook it in a fish kettle with a lifter or tied in a napkin in a pot with a plate laid at the bottom.
  3. Serve with melted butter or the following sauce: Sauté finely chopped onions in butter without browning, lightly toast a little flour in it, and add boiling water or, if possible, fish water.
  4. Add finely chopped parsley and ground pepper, cook the sauce until thickened, and serve with the fish.
