Marinated Fried Herring

Ingredients
- fried herrings (see previous recipe) (as needed)
- bay leaves (plenty)
- whole peppercorns (a little)
- allspice (a little)
- sliced lemon peel (a little)
- capers (a little)
- good wine vinegar (as needed)
- boiled water (as needed)
Instructions
- Fry the herrings in good cooking oil as described previously.
- Place plenty of bay leaves, whole peppercorns, allspice, sliced lemon peel, and capers on the bottom of a container.
- Arrange the chilled herrings on top, belly-down and as close together as possible, then another thin layer of spices, and then more herrings, until all are packed.
- Mix good wine vinegar with enough boiled water until it has the right pungency, and pour this, chilled, over the herrings.
