- barbel (as needed)
- salt (a little)
- flour (a little)
- butter (plenty)
Instructions
- Clean the barbel like other fish and cut it into pieces three fingers wide, splitting larger pieces.
- Then wash and dry them, sprinkle with fine salt, dredge in flour, and fry quickly until done and quite crispy in plenty of fresh butter that has settled after boiling.
- Serve with potatoes and apples, white beans and apples, or potato salad.
- Barbel are only enjoyable in the winter months; the roe of the barbel should not be eaten as it is harmful to health.
