Water Rice

Ingredients
- Rice (blanched) (as needed)
- Water (as needed)
- Salt (a little)
Instructions
- Place the blanched rice in an earthenware dish and pour in enough boiling water to just cover it.
- Cook until semi-soft with the necessary salt, drain the remaining water, and let it steep for another half an hour next to the fire, tightly covered.
- The rice will then be soft but completely dry; it tastes excellent with all roasts and is a superb substitute for potatoes.
