Saxon Brine Eggs
4 servings
Ingredients
- eggs (as needed)
- onion water (for yellow coloring) (a little)
- saltwater (heavily salted) (as needed)
Instructions
- Brine eggs taste best when cooked in natural brine, but you can also make them yourself.
- For a yellow color, cook the eggs hard in onion water; otherwise, use regular water.
- Afterward, gently tap the shell all around without removing it, and place the eggs in water so salty that they float for 24 hours.
Modernized from a treasured 19th-century German cookbook.
