Polenta from Cornmeal

  1. Stir the cornmeal and a little salt into 1 liter of rapidly boiling water.
  2. Make a hole in the center of the mixture with a thick wooden spoon handle, allowing the water to boil up through it.
  3. After 10 minutes of cooking, remove from heat, stir into a thick porridge, and let stand, covered, in a moderately warm place for another 15 minutes.
  4. Using a metal spoon, cut large pieces, place them on a hot dish, and sprinkle each layer with Parmesan cheese or toasted onion slices.
  5. Finally, pour brown butter over it.
