- 4 pcs Eggs (whole)
- 8 tbsp Milk
- Fine flour (as needed)
Instructions
- Portion for 8 to 10 people.
- You will need 4 whole eggs, 8 tablespoons of milk, and as much fine flour as the milk absorbs.
- Put the flour into a bowl, make a well in the center, add eggs and milk, and mix with a knife to form a dough.
- Place this on a baking board and, continuously adding flour, work it with your hands into a smooth, very firm dough.
- Divide the dough into four pieces, roll each one as thin as paper in both directions, and hang over a transversely placed stick to dry.
- Once the fourth piece is rolled out, place the first one back on the table, dust with a little flour, cut crosswise, stack the pieces, loosely roll them up, and cut into straw-width strips with a knife.
- Pull the strips apart, sprinkling a little flour over them, and let them dry; however, you can also use them immediately.
