Seagull and Lapwing Eggs
4 servings
Ingredients
- seagull or lapwing eggs (as needed)
Instructions
- These eggs are exclusively eaten hard-boiled and must therefore be cooked for 8 to 10 minutes.
- Special care is required when placing them, as the shell is very delicate.
- As the eggs are sometimes already incubated, it is advisable to test them in cold water before cooking: if they sink immediately, they are fresh; if they turn, they have already been incubated.
Modernized from a treasured 19th-century German cookbook.
