4 servings
Ingredients
- Noodles (according to basic recipe) (as needed)
- Salt (a little)
- Milk (as needed)
- Butter (a generous piece)
- Zwieback (crushed, browned in butter) (as needed)
Instructions
- Place the noodles, prepared according to the basic recipe, into boiling salted water and cook until tender, about 30 to 45 minutes, then drain in a colander.
- Bring milk to a boil with a generous piece of fresh butter and a little salt.
- Add the noodles and let them simmer in the milk for a few minutes.
- When serving, sprinkle enough crushed zwieback, pan-fried until golden brown in butter, over the noodles to completely cover them.
- This dish pairs well with roasted veal, but also with stewed or baked apples.
Modernized from a treasured 19th-century German cookbook.
