Cutting Beans, Dried
4 servings
Ingredients
- Beans, large, juicy, mature but tender (as needed)
- Salt (a little)
Instructions
- Cut large, juicy, already mature but still tender beans into pieces about half a finger long.
- Boil them in lightly salted boiling water for a few minutes and dry them gently in a lightly heated oven, not too much.
- They must remain light green and should not break.
- Wide pole beans can also be dried in the same way, but finely shredded.
Modernized from a treasured 19th-century German cookbook.
