Boiled Sliced Beans in Salt

Ingredients
- beans (as needed)
- salt (a little)
Instructions
- Pick the beans as soon as they are the right size for preserving, cut them finely and long, mix with a little salt, and stir loosely until juice appears.
- Press the beans into a barrel and weigh them down with a board and weight.
- If more beans have grown, add them in the same way until all beans intended for preserving are collected.
- Bring plenty of water to a boil in a large kettle, fill a basket halfway with the preserved beans, place it in the boiling water, let it boil briefly, and place it on coarse cloths in the cellar to cool (the beans will lose their green color during this process).
- Then press the beans into the barrel with a little salt and cover with a cloth, leaves, board, and weight.
