Salad Beans in Vinegar

  1. Thoroughly string the salad beans (any size) and place them in portions into a copper kettle of rapidly boiling water; leave them for only about 10 minutes, otherwise they will become too soft and spoil easily.
  2. Afterwards, drain and let cool.
  3. Then, layer them in a pot with horseradish or ginger, bay leaves, pepper, and allspice.
  4. Stir together wine vinegar, water, and a handful of salt until the salt dissolves, then pour over the beans so they are completely covered.
  5. Place a bag with a thin layer of mustard seeds on top, covering the beans completely, along with a slate slab and a stone.
  6. Seal the pot and place it in an airy, cold location.
