Salad Beans in Vinegar and Sugar

  1. Use seedless salad beans and string them.
  2. To keep their beautiful green color, par-boil them in a copper kettle of boiling water and lay them on a cloth to drain.
  3. Bring sugar and vinegar to a froth, add the cinnamon and beans, and cook for a little while longer.
  4. After cooling, fill into glasses.
  5. After a few days, reduce the vinegar further, pour it cold over the beans, and seal the glasses as usual.
