4 servings
Ingredients
- 500 g Salad beans
- 375 g Sugar
- 0.38 liter Wine vinegar
- 4 g Whole cinnamon
Instructions
- Use seedless salad beans and string them.
- To keep their beautiful green color, par-boil them in a copper kettle of boiling water and lay them on a cloth to drain.
- Bring sugar and vinegar to a froth, add the cinnamon and beans, and cook for a little while longer.
- After cooling, fill into glasses.
- After a few days, reduce the vinegar further, pour it cold over the beans, and seal the glasses as usual.
Modernized from a treasured 19th-century German cookbook.
