Pearl Onions

Ingredients
- Pearl onions (as needed)
- Salt (a little)
- Vinegar (a little)
- White pepper (a little)
- Horseradish (a little)
- Tarragon leaves (a little)
Instructions
- Wash the pearl onions, sprinkle with salt, and rub them on a cloth until the peel is completely removed.
- Then pour boiling vinegar over them and let stand for a few days.
- Afterwards, drain well on a sieve, fill into glasses, pour fresh boiling vinegar over them, and seal the glasses after cooling.
- If desired, layer some white pepper, horseradish, and tarragon leaves between the onions before pouring the vinegar over them.
