  1. Wash the pearl onions, sprinkle with salt, and rub them on a cloth until the peel is completely removed.
  2. Then pour boiling vinegar over them and let stand for a few days.
  3. Afterwards, drain well on a sieve, fill into glasses, pour fresh boiling vinegar over them, and seal the glasses after cooling.
  4. If desired, layer some white pepper, horseradish, and tarragon leaves between the onions before pouring the vinegar over them.
