Young Beans in Stoneware Jugs

Ingredients
- young beans (as needed)
- 1 tsp salt
Instructions
- Stoneware jugs are also good for preserving young beans (or other young vegetables).
- These must be well cleaned and completely dry.
- Cut the young beans and fill them into the jugs as densely as possible; add 1 teaspoon of salt on top of each jug.
- Cork the jugs well and place them in a kettle with cold water, set over high heat; place enough hay between the jugs so they don't touch.
- The kettle remains on the heat for about 1 hour, then let the jugs cool.
- Afterward, seal them well and store them in the cellar in a dark place.
- For consumption, the beans are steamed like fresh ones in broth or in water with butter.
