Mushrooms in Vinegar

Ingredients
- Mushrooms (as needed)
- Cloves, without heads (a little)
- Pepper (a little)
- Allspice (a little)
- Bay leaves (a little)
- Tarragon (a little)
- Ginger (a little)
- Wine vinegar (a little)
Instructions
- Use small or large mushrooms; remove all soft parts, quickly wash the mushrooms so they don't absorb too much water, and dry them on a cloth.
- Meanwhile, bring wine vinegar to a boil with cloves, pepper, allspice, bay leaves, tarragon, and ginger.
- Let the mushrooms boil once in it, then fill them into glasses.
- Continue to boil the vinegar for a short time, then pour it cold over the mushrooms.
- After 14 days, reduce the vinegar a bit more, pour it cold over them again, and proceed as with general pickling rules.
