Mushrooms in Vinegar

  1. Use small or large mushrooms; remove all soft parts, quickly wash the mushrooms so they don't absorb too much water, and dry them on a cloth.
  2. Meanwhile, bring wine vinegar to a boil with cloves, pepper, allspice, bay leaves, tarragon, and ginger.
  3. Let the mushrooms boil once in it, then fill them into glasses.
  4. Continue to boil the vinegar for a short time, then pour it cold over the mushrooms.
  5. After 14 days, reduce the vinegar a bit more, pour it cold over them again, and proceed as with general pickling rules.
