Veal Sweetbread Soup

Ingredients
- veal sweetbreads (as needed)
- butter (a little)
- flour (a little)
- calf meat broth (as needed)
- parsley or mace (a little)
- egg yolks (a little)
Instructions
- Cut the prepared veal sweetbreads into small cubes and sauté in butter and flour until golden.
- Cook with calf meat broth for a while and stir in finely chopped parsley or crushed mace and egg yolks.
- This soup is also suitable for the sick; in this case, however, omit the seasoning and simply sweat the flour in a little butter until white.
