  1. Boil 1 l of beef broth from meat scraps and bones.
  2. Separate the oxtail at the joints and blanch it.
  3. Sauté the chopped soup herbs in butter in a soup pot, after 10 minutes add the beef broth and one glass of white wine, add the oxtail, bacon, and ham scraps and cook slowly until tender.
  4. Remove the meat, strain the broth through a fine sieve, skim off the fat, and add Madeira.
  5. Bring to a boil again, season with cayenne pepper, and thicken with brown flour.
  6. When serving, place a piece of oxtail on each plate.
