Oxtail Soup

Ingredients
- meat scraps and bones (for beef broth) (as needed)
- 1 pcs oxtail
- soup herbs, chopped (a little)
- butter (a little)
- 1 glass white wine
- bacon (a little)
- ham scraps (a little)
- 0.5 glass Madeira
- cayenne pepper (a little)
- brown flour (a little)
Instructions
- Boil 1 l of beef broth from meat scraps and bones.
- Separate the oxtail at the joints and blanch it.
- Sauté the chopped soup herbs in butter in a soup pot, after 10 minutes add the beef broth and one glass of white wine, add the oxtail, bacon, and ham scraps and cook slowly until tender.
- Remove the meat, strain the broth through a fine sieve, skim off the fat, and add Madeira.
- Bring to a boil again, season with cayenne pepper, and thicken with brown flour.
- When serving, place a piece of oxtail on each plate.
