Fieldfare Soup

Ingredients
- 4 piece Fieldfares (thrushes)
- Butter (plenty) (a little)
- Salt (a little)
- Celery, carrots, and onions, in slices (a little)
- 2 tbsp Flour
- 2 l Beef broth
- Sponge or semolina dumplings (as needed)
Instructions
- For 4 people, allow 4 fieldfares, slowly roast them in plenty of butter, lightly salted, in a tightly closed dish until tender.
- Slice the breast meat finely and set aside.
- Steam the crushed bone framework with sliced celery, carrots, and onions in the roasting butter, dust with flour, and pour in 2 liters of beef broth.
- Simmer slowly for one hour, skim off the fat, strain the soup through a sieve, and cook sponge or semolina dumplings until tender in it.
- Serve over the breast meat and dumplings.
