Cold Elderflower Milk

Ingredients
- 1.5 liter milk
- 2 umbels elderflower
- sugar (to taste)
- salt (a little)
- 1 tbsp potato flour
- 3 piece egg yolk
- egg white (for dumplings) (a little)
- sugar and cinnamon for sprinkling (a little)
Instructions
- Boil milk with elderflower umbels for about 10 minutes and strain through a hair sieve.
- Add sugar to taste and a little salt, thicken with potato flour stirred clear in water, and stir in the egg yolk.
- Pour the milk into a tureen, place egg whites beaten to a foam with sugar as dumplings on top, sprinkle with sugar and cinnamon, and immediately cover the tureen so the dumplings cook through.
- After cooling, place in the refrigerator.
