Mutton Soup

Ingredients
- 750 g mutton (leg or neck)
- water (as needed)
- butter (a little)
- semolina (a little)
- egg yolks (a little)
- parsley or nutmeg (a little)
Instructions
- Cook a meat soup according to the basic recipe using ¾ kg of mutton, preferably from the leg or neck.
- During cooking, skim off the fat as cleanly as possible by gently pushing the pot to the side so the fat collects in one spot.
- Allow a small piece of butter to cook with it for a mild flavor.
- Half an hour before serving, sprinkle in semolina, stir the finished soup with egg yolks, and season with chopped parsley or nutmeg.
