Oat Groat Soup
4 servings
Ingredients
- 4 tbsp oat groats, finely ground, or rolled oats
- water (a little)
- 1 l milk
- salt (a little)
Instructions
- Scald the oat groats and wash several times with cold water, then bring to a boil with cold water and cook slowly until soft with a little water, stirring frequently as it easily sticks.
- As soon as the groats are soft, bring the milk to a boil, add it, let the soup cook for another fifteen minutes, and season with salt.
- The soup becomes even more flavorful with rolled oats instead of groats, as they only have soft husks: they are added unwashed directly with cold water and cooked for half an hour, then processed as above.
Modernized from a treasured 19th-century German cookbook.
