Green Spelt Soup

Ingredients
- 125 g green spelt flakes
- 1.5 l beef broth or water
- butter (a little)
- egg yolks (as desired)
- toasted bread slices, or sponge/semolina dumplings (as needed)
Instructions
- For 4 people, allow for 125 g of green spelt flakes.
- Cook beef broth, strain it, bring it back to a boil, and add the green spelt flakes mixed with cold water.
- They will be soft after ¼ hour and, being very fine, can be eaten directly with the soup, or you can pass the soup through a sieve.
- Serve over toasted bread slices or sponge/semolina dumplings.
- If you cook the flakes in water instead of broth, add a piece of fresh butter and whisk in egg yolks before serving.
