Apple Soup with Rice

Ingredients
- 1 soup plate sour apples, finely diced
- 1 cup blanched rice
- water (as needed)
- salt, cinnamon, and lemon peel (a little)
- sugar (to taste)
- 1.5 pcs egg yolk
Instructions
- Cook the finely diced apples with the blanched rice in water until very soft, adding a little salt, cinnamon, and lemon peel.
- Strain the soup through a sieve, sweeten with sugar to taste, bring to a boil again, and whisk in the egg yolk.
- Instead of rice, you can also cook rusks or white bread with the apples.
