Sour Cream Sauce
4 servings
Ingredients
- 1.5 tablespoons flour
- butter or good fat (a little)
- sour cream (as needed)
- sharp vinegar (a few spoonfuls)
- 1 piece butter (lastly)
- salt (a little)
- sugar (a little)
- nutmeg (a little)
Instructions
- Depending on whether more or less sauce is needed, let 1-2 tablespoons of flour rise in butter or good fat, stir in enough sour cream to bind the sauce, let it cook through, and as soon as it is removed from the heat, stir in a few spoonfuls of sharp vinegar, a piece of butter, salt, a little sugar, and a little nutmeg.
- This sauce is very good with warm salad beans, potatoes, as well as endive and lettuce.
Modernized from a treasured 19th-century German cookbook.
