Herring Sauce

  1. Finely chop a soaked herring.
  2. Sauté a few finely chopped shallots or onions in butter until light yellow, let one to two tablespoons of flour turn yellow in it, and stir in as much meat broth or water as needed for a fairly creamy sauce.
  3. Let this sauce simmer with a little pepper, half a bay leaf, and 2-3 lemon slices or a little vinegar, then add the finely chopped herring.
  4. As soon as it has just cooked through with the sauce, stir in a piece of raw butter.
  5. Serve with fish and meat.
