  1. Take half a teacup each of Teltow turnips and young carrots.
  2. Cook each separately in salted water until tender and, after draining, dress with vinegar, oil, salt, and pepper.
  3. Separately cook cauliflower florets, asparagus tips, green peas, and young green beans in salted water until tender, drain, and let cool.
  4. Meanwhile, prepare a sauce from two hard-boiled egg yolks, one raw egg, oil, salt, a little sugar, and vinegar, and mix it with the latter vegetables.
  5. Arrange the salad attractively on a platter and garnish the rim with carrots and turnips taken from the marinade, alternating with young heart leaves of head and endive lettuce.
