Watercress Salad

Ingredients
- watercress (as needed)
- oil (plenty)
- vinegar (a little)
- salt (a little)
Instructions
- Watercress, a very healthy, blood-purifying, and stomach-strengthening salad, is usable throughout the winter and spring as long as the leaves are tender.
- Cut the stems from the leaves so that about three fingers' width of stem remains attached.
- Wash several times in plenty of water by pulling the cress out and immersing it again.
- Shake well and mix with plenty of oil, vinegar, and a little salt.
