Bean Salad

Ingredients
- cut or snap beans (as needed)
- salted water (as needed)
- vinegar (a little)
- oil (a little)
- salt (a little)
- pepper (a little)
- sugar (to taste)
- onions, finely chopped (a little)
- parsley, finely chopped (a little)
Instructions
- Prepare cut or snap beans as you would for vegetables, wash them, boil until tender in salted water, and drain on a sieve.
- While still warm, mix with vinegar, oil, salt, pepper, sugar (if desired), and finely chopped onions, and let it steep thoroughly.
- Before serving, add finely chopped parsley and taste the salad again.
- This salad can also be made from pickled salad beans: pour boiling water over the vinegar-pickled beans, let them sit for a while, drain the water, and mix the beans with oil, salt, pepper, and chopped parsley.
