English Rhubarb Pie

Ingredients
- shortcrust pastry (as needed)
- 750 g rhubarb, peeled, cut into finger-long pieces
- sugar, crushed (as needed)
- 1 pcs lemon, zested
- 1.5 glass good white wine
Instructions
- Prepare like the apple pie, but using rhubarb instead of apples.
- It is advisable to blanch the peeled rhubarb, cut into finger-long pieces, briefly in boiling water beforehand to prevent it from tasting too tart.
- Then, as with the apple pie, fill the dish lined with shortcrust pastry with sugar, grated lemon, and white wine, cover with a pastry lid, and bake in a moderately warm oven for 1 hour.
