English Apple Pie or Apple-pie

Ingredients
- shortcrust pastry (as needed)
- 750 g peeled apples, in slices
- sugar, crushed (as needed)
- 1 pcs lemon, zested
- 1.5 glass good white wine
- caster sugar, for serving (as needed)
- sweet cream, for serving (as needed)
Instructions
- Prepare shortcrust pastry, roll it out, and cut it to size as a lid for a deep, white-glazed baking dish.
- Place an upside-down teacup or porcelain container, slightly lower than the dish, in the center of the dish.
- Fill the dish with peeled, sliced apples, sprinkle with crushed sugar on which the lemon has been zested, and pour 1-2 glasses of good white wine over it.
- Place the pastry lid on top, press it around the dish, and crimp the edge for decoration.
- Place on a brick in a moderately warm oven, as more top heat than bottom heat is needed, and bake for 1 hour.
- When serving, always arrange a piece of the pastry lid with the apples and serve with caster sugar and sweet cream.
