English Apple Pie or Apple-pie

  1. Prepare shortcrust pastry, roll it out, and cut it to size as a lid for a deep, white-glazed baking dish.
  2. Place an upside-down teacup or porcelain container, slightly lower than the dish, in the center of the dish.
  3. Fill the dish with peeled, sliced apples, sprinkle with crushed sugar on which the lemon has been zested, and pour 1-2 glasses of good white wine over it.
  4. Place the pastry lid on top, press it around the dish, and crimp the edge for decoration.
  5. Place on a brick in a moderately warm oven, as more top heat than bottom heat is needed, and bake for 1 hour.
  6. When serving, always arrange a piece of the pastry lid with the apples and serve with caster sugar and sweet cream.
