Westphalian Potato Pancakes or Reibkuchen

Ingredients
- 2 kg raw potatoes, peeled and grated
- 4 pcs Eggs
- 3 tbsp thick sour cream
- 2 tbsp Flour
- Salt (a little)
- Fat for baking (pork lard or rendered bacon) (as needed)
Instructions
- Let the grated potatoes drain on a colander for about 5 minutes, then mix in eggs, thick sour cream, flour, and salt.
- Stir the mixture well, drop a serving spoon full into hot fat, and bake the cake first on one side, then on the other.
- Pork lard or rendered bacon can also be used for baking.
